chore: improve issue templates * added a checklist to discourages ai slop issues and duplicate issues * added a pull request template to discourage ai slop prs and encourages a descriptive pr format * restructured and simplified bug issue template a little to make it easier to read * made the feature request template use `.yml` instead of `.md` * renames `.yaml` files to `.yml` for consistency * removed useless fields in `FUNDING.yml` * linked discord invite in `config.yml` * made lotus issues a contact link in `config.yml` instead of an issue template
